[Denver, CO] Sắp Sửa made Bon Appetit’s list of the eight “Most Anticipated Restaurant Openings of Summer 2023.”

It is easy to see why.

Husband-wife duo chef Tuan “Ni” and chef-baker Anna Nguyen have worked out of a ghost kitchen and held pop-up dinners for a couple of years.

Now, with a restaurant of their own, the couple will “serve dishes such as charred cabbage with an egg yolk sauce and a sweetened condensed milk panna cotta with almond granita,” Bon Appetit writes.

“Anthony, who is first-generation Vietnamese American, draws on his upbringing for the menu, which the pair describes as ‘nontraditional Vietnamese.’ Those who already love Sắp Sửa’s French and Vietnamese-inspired pastries like banh chuoi (a sticky-sweet banana cake), and candied ginger shortbread will be happy to know Anna is taking the lead on a morning bakery in the restaurant’s space.”

The magazine 5280 adds, “Ni explained that Sắp Sửa’s menu should feel like the internet meme ‘IYKYK’ (if you know, you know). Each dish has been inspired by a traditional counterpart, so the chefs’ sweet spot is when Sắp Sửa’s flavors are both reinventive and nostalgic. For Ni, the function of tradition is not limitation, but rather inspiration.”

“Sắp Sửa is unmistakably the creation of a first-generation Asian American chef who grew up eating time-honored dishes but also enjoyed Double-Doubles from In-N-Out.”
