OHSUN Banchan Deli & Cafe
Eater Seattle reports that, “After showing proof of concept with a hugely popular pop-up, cookbook author Sara Upshaw has opened her highly anticipated gluten-free Korean restaurant, OHSUN Banchan Deli & Cafe.
“Expect about half vegan options among noodles, soups, stewed meats, and ten or so seasonally rotating banchan, the kinds of fermented side dishes (like various styles of kimchi) that typically accompany rice at Korean meals”.
Upshaw adds, “We researched hard to see if we could get staple ingredients gluten free while keeping the integrity of Korean dishes and, well, we did! The outpouring of appreciation from the gluten-free community has been incredible, so it was no question to continue with this offering. On top of this, at least 50% of our menu will always be vegan.”
As a counter-service neighborhood shop where you can grab comforting Korean food, pantry items and a drink or two, OHSUN Banchan Deli & Cafe opened Jan. 3, 2023.
NOTE: Apparently the City of Seattle makes it difficult for small, independent restaurateurs to open a new business. The OHSUN Instagram account will tell you the story of its experience. “Mom and pop” restaurants are the backbone of the nighttime economy … even if this one is only open until 7 p.m., Wed. through Sat.
