Parker Hospitality and Chef Avgeria Stapaki opened Nisos on Jul. 8, 2022.
The modern Mediterranean restaurant in the West Loop will offer dishes like:
- Moussaka with potato strings, gruyere foam, cinnamon tea
- Lamb shank with vegetables and lamb jus
- Aegean Sea Bass carpaccio with lemon gel, garlic blossoms, beetroot tapioca chip
- Octopus with fava, shallot chutney
- Red snapper with fregola, saffron, fennel blossoms
- Pavlova’s cheesecake with white chocolate monte, pistachio crumble, strawberry sorbet, meringue, raspberry powder

Stapaki is a Greece-born chef whose culinary career has seen her serve as sous chef of Michelin-starred Hytra in Athens. Restaurateur Brad Parker develops, manages and operates a portfolio of restaurants and lounges including The Hampton Social and The Bassment.
