Railspur
Located in Cheyenne’s West Edge District, Railspur is a multi-level bar and coffee shop.
The building incorporates an industrial, urban design with shipping containers and an in-floor railroad track.
Part of Cheyenne’s original (and literal) “West Edge,” the Railspur property began its life as a railroad spur for the military. It was used to access what’s now F.E. Warren Air Force Base.
Co-owners and chefs Juan Colorado and Seth Stefanik met while working at The Metropolitan Downtown restaurant.
Together, they created Micro Pop-Up Concepts: An incubator of food and beverage concepts including Los Conejos. The food truck, recognized by its iconic Jackalope logo, has quickly become a street food staple of Cheyenne.
Now the entrepreneurs take the leap to their own brick-and-mortar operation.
The perfect bites from Railspur’s menu include an elk steak gyro on toasted pita bread and a seasoned burger patty with apple butter, raclette cheese on a kaiser roll. Yum.
However, we’re betting the Sunday brunch will be exceedingly popular.
